CHIANTI COLLI FIORENTINI D.O.C.G.
ALCOHOL CONTENT: 12-12,5 It is made with Trebbiano bianco (70%) and
Malvasia del Chianti (30%). The grapes are pressed sogtly and the must ferments
for 20 days at a controlled temperature (18 C) to keep all the aromas inside the
wine. It is bottled in the spring following the harvest. The colour is traw
yellow, the aroma is very intense and fruity; in the mouth it is dry, round and
its flavour is full. ALCOHOL CONTENT: 11-11,50 This Chianti comes from the southward facing
hills surrounding Florence which are characterized by a type of soil that is not
very fertile but very rich in limestone, both of which are responsible factors
for giving the product such valued characteristics as it full body and
delicacy.
The grapes used are predetermited by reproduction regulation and are the
following: S.Giovese (80%) - Canaiolo (10%) - Tuscan Trebbiano (5%) - Colorino
and Mammolo (5%).
The yield per hectare is approximately 70 quintals.
The harvest takes place only when the grapes are completely ripe, at the
beginning of October. The vinification is carried out with the skin for about
8-10 days. After this phase, as soon as the wine has fermented, it is drawn the
vats and it slowly finishes its fermentation.
In November the "Tuscan Governo" is made. This ancient enological method consists
in letting the wine ferment a second time with selected grapes, duly dried on
mats. In this way, the product is given a greater sofness and a pleasant
liveliness, which are typical characteristics of Chianti wine born in this
region.
The subsequent aging takes place in oak barrels located in the low
cellars of the villa at a constant temperature (10-20 C) and humidity level
during the entire year. The wine is ready for consumption in the summer after the
harvest and it presents the following characteristics:
COLOR: bright ruby red, garned color
when the wine is aged.
NOSE: intensely winy with a scent of violet and
with a more pronunced finess during its aging due to the esterification of the
aromatic substances.
TASTE: aromatic, dry, sapid, slighty tannic, that
refines with the aging and becomes soft and velvety. It is a typical wine for any
meal particularly suitable with roast meats and game. It should be served at room
temperature (18-20 C).
