Ribollita

Serves 6
Ingredients:

500 gr. of potatoes - 300 gr. of carrots - 200 gr. of baby marrows - 1 slice of green cabbage - 7-8 leaves of black cabbage - a bunch of thyme, sage and rosemary - 1 onion - 100 gr. white boiled beans - 300 gr. peeled tomatoes- 1 bunch of mountain spinach - 500 gr. of bread - 100 gr. of parmesan cheese - 3 spoonfuls of olive oil - fresh meat stock or beef cube - 2 It. of water.

Cooking time: 2 hours

Fry up the onion with the oil in a casserole dish. Next add the tomatoes, the water, the boiled beans, salt and pepper, the thyme, sage and rosemary. Leave to cook for 15 minutes. Then add all the chopped vegetables and leave to cook gently for about one hour. Then add a beef cube and more water if necessary.

When the soup is ready, cut the bread into slices, toast and place it in layers, gradually adding more soup on top. When it is cold bring to the boil again and serve in dishes with the addition of a dribble of oil on top.
