Potato gnocchi with prawns and white truffles
Ingredients for 4:
400g. of gnocchi
200g. of prawns
2 tablespoons of extra virgin olive oil
80g. of white truffles
1 clove of garlic
1dl. of fish broth
1 bunch of parsley
Preparation
Peel the prawns and gently fry them with the clove of garlic in the extra virgin
olive oil. When nicely cooked, flambè with some cognac, add the fish
broth and continue to cook for another 4 minutes. Cook the gnocchi, place them
in a serving dish and mix all the ingredients together. Serve up with a topping
of chopped parsley and slivers of truffle. Wine recommended: Torre di Tufi
