Pasta and beans Florentine style
Serves 8:
800 gr. Tuscan white beans (the quality of the beans is very
important)
250 gr. of olive oil
250 g. ripe S. Marzano tomatoes
1 onion
3 cloves of skinned garlic
5 cloves of unskinned garlic Rosemary, sage, celery stalk, salt and pepper
200 gr. of "ave maria or tubettini" pasta
Preparation:
Leave the beans to soak in water the day before. In the morning,
drain and wash the beans. Put them on to cook in plenty of water. Add some salt,
the peeled garlic and the celery and gently cook for about 2 hours. Gently fry
the onion, the 3 cloves of skinned garlic, the sage and the rosemary in the
200g of oil. When the onion turns golden, add the chopped tomato together with
1 litre of the cooking water from the beans.
Cook for about 30 minutes, seasoning with salt and pepper and then puree the
mixture. Cook the "ave maria o tubettini" pasta and add to the mixture. Serve
with a topping of the remaining 50gr. of olive oil.
