Chianti flavoured fillet of steak
Serves 4:
4 fillets of steak of about 80 gr.
each 1/4 lt. of vintage Chianti wine
Salt
Pepper
Worcester Sauce
Butter
To prepare: Place some olive oil in a pan and heat until really hot, then add
the fillets of steak. Season with salt and white pepper and cook to taste. Remove
the steaks from the pan which should be cleaned to remove cooking oil. Replace
the steaks in the pan, add the wine and allow to evaporate. Next add the Worcester
sauce and the knobs of butter, previously tossed in flour, to thicken the sauce.
When the sauce is nice and thick, place the steaks on the serving dishes and
pour the sauce on top. Serve hot.
